Physicochemical Properties and Antioxidant Activities of Polysaccharides from Cheonggukjang and Pueraria Thunbergiana-Cheonggukjang

Abstract
The objective of this study was to examine the antioxidant activities of polysaccharides from cheonggukjang and Puerariathunbergiana-cheonggukjang. The yields of polysaccharides from cheonggukjang (PSC) and polysaccharides from Pueraria thunbergiana-cheonggukjang (PSPC) were 8.01%, and 7.53%, respectively. The total sugar content of PSPC (72.57 g/100 g)was higher than that of PSC (65.29 g/100 g). The total protein contents of PSC and PSPC were 20.53 g/100 g, and 21.68 g/100 g, respectively. The uronic acid content of PSPC (15.84 g/100 g) was higher than that of PSC (2.72 g/100 g). The hexosamine contents of PSC and PSPC were 1.09 g/100 g, and 2.04 g/100 g, respectively. The DPPH radical scavenging activities of PSPC improved with an increase treatment concentration. The ABTS radical scavenging activities of PSPC was 12.30-87.64% (1-5 mg/mL) higher than those of PSC. The reducing power and ferric reducing antioxidant power of PSPC were 0.18-0.93, and 0.07- 0.54 mM, repectively. In conclusion, we provided experimental evidence that polysaccharides from cheonggukjang and Puerariathunbergiana-cheonggukjang have potential as functional materials.
